Pretzel Coated Fried Fish

 
Ingredients -

1 quart Oil for Frying
3/4 cup All-Purpose Flour
1 teaspoon Salt
1/2 teaspoon Fresh Ground Black Pepper
1 pound Frozen Cod Fillets, thawed
2 Large Eggs
3/4 cup Pretzels, crushed

 
Preparation:

1. Heat the oil in a deep fryer to 350 degrees.

2. In a large resealable plastic bag mix the flour, salt and pepper.

3. Place the cod in the bag, and gently shake to coat.

4. Place the eggs and crushed pretzels in two separate shallow dishes. Dip the coated cod in the eggs, then into the crushed pretzels.

5. Fry the coated fish for 10 minutes in the preheated oil, turning once, until golden brown and easily flaked with a fork.

Cod can be interchanged freely with pollock and haddock, two members of the cod family that may be more readily available.

Properly fried fish is light and virtually greaseless. Fish as a rule is easily digested and fried fish when eaten in moderation is as well. Always insure that the temperature of the oil you are frying has reached a high enough temperature to insure the right cooking conditions.
