Pan Seared Salmon With Sweet And Spicy Asian Glaze

Salmon fillets marinated in soy sauce, red wine vinegar, olive oil, orange juice, ginger, and minced chili pepper. Seasoned with salt and pepper, fillets are pan seared and topped with spicy asian glaze.
Ingredients -

Marinade:
Juice of 1 Orange
3 tablespoons Rice Wine Vinegar
2 tablespoons Reduced-Sodium Soy Sauce
2 tablespoons Olive Oil
1 small Red or Green Chile Pepper, thinly sliced
1 tablespoon grated Fresh Ginger

Salmon:
4 Salmon Fillets
1/8 teaspoon Kosher Salt
1/8 teaspoon Pepper
2 teaspoons Olive Oil
2 tablespoons chopped Fresh Cilantro Leaves

 
Preparation:

1. In ceramic casserole or baking dish, combine orange juice, rice wine vinegar, soy sauce, olive oil, chili pepper, and fresh ginger.

2. Add salmon to marinade. Coat both sides of fish.

3. Cover dish and refrigerate 30 minutes. Reserve marinade.

4. Season salmon with salt and pepper.

5. Heat olive oil in heavy skillet.

6. Add salmon to skillet, skin side down.

7. Cook fillets 4 minutes, turn cook additional 4 minutes.

8. Transfer fish to serving platter. Cover with foil.

9. Lightly clean skillet. Add marinade and reduce until glaze thickens.

10. Drizzle glaze over salmon.

11. Sprinkle fillets with cilantro and serve.

Substitute with regular soy sauce, if necessary.
