Mustard And Dill Cod Fillets

Cod fillets marinated in mixture of olive oil, lemon juice, Dijon mustard, dill, garlic, coarse salt, and fresh ground black pepper.
Ingredients -

1/4 cup Lemon Juice from Concentrate
1/4 cup Olive Oil
2 tablespoons chopped Dill
1 tablespoon Dijon Mustard
1 clove Garlic, minced
1 pound Cod Fillets, rinsed and pat dry
Coarse Salt, to taste
Fresh Ground Black Pepper, to taste

 
Preparation:

1. Rinse cod, pat dry.

2. Place fish in shallow baking or casserole dish.

3. Whisk together lemon juice, olive oil, dill, Dijon mustard, garlic, salt and pepper.

4. Pour mixture over cod and let stand 60 min.

5. Preheat grill.

6. Grill over direct heat 6 minutes each side.

You could certainly use the juice from freshly squeezed lemons in place of the lemon juice from concentrate.

Unpackaged fish should be rinsed, pat dried and placed on plates covered with paper towels for excess moisture to be absorbed.
