Mexican Baked Fish

 
Ingredients -

1-1/2 pounds Cod
1 cup Salsa
1 cup Sharp Cheddar Cheese, shredded
1/2 cup Corn Chips, coarsely crushed
1 Avocado, peeled, pitted and sliced
1/4 cup Sour Cream

 
Preparation:

1. Preheat the oven to 400 degrees.

2. Lightly grease one 8x12 inch baking dish.

3. Rinse the fish fillets under cold water, and pat dry with paper towels.

4. Lay the fillets side by side in the prepared baking dish.

5. Pour the salsa over the top, and sprinkle evenly with the shredded cheese.

6. Top with the crushed corn chips.

7. Bake, uncovered, in the preheated oven for 15 minutes, or until the fish is opaque and flakes with a fork.

8. Serve topped with the sliced avocado and sour cream.
