Fish in a Vegetable Patch

 
Ingredients -
1 Cup Tomato Sauce
1 Cup Celery, diced
1/2 Cup Green Bell Pepper, chopped
1/2 Cup Red Onion, diced
1/3 Cup Carrots, diced
2 Tablespoons Fresh Lemon Juice
1 1/2 Teaspoons Worcestershire Sauce
1/2 Tablespoon Salt
1 Pound Halibut Fillets
4 Slices Lemon, for Garnish
 
Preparation:

1. Combine the tomato sauce, celery, green pepper, onion, carrots, lemon juice, Worcestershire sauce and salt in a small sauce pan.

2. Bring the mixture to a boil. Reduce the heat and simmer, covered, for 5 minutes.

3. Spoon the vegetable mixture into a shallow 1 1/2 quart baking dish.

4. Place the fish filets over the vegetables and spoon some of the sauce over the fish.

5. Bake, uncovered, at 400 degrees for about 15 minutes or until the fish flakes with a fork.

6. Garnish with lemon twists and chopped celery.
