Fish Recipe Tips -
Buying Fish

You should buy fish the same day you plan to prepare it. Fish is highly perishable and breaks down immediately after the muscles begin to relax from a state of rigor the fish goes into when caught. Bacteria begin breaking down the fish immediately at this point.

Fish Recipe Tips -
Fresh Fish Storage

When you bring fish home, immediately wrap the fish loosely in wax paper, and place it in the coolest part of your refrigerator until you are ready to cook it.
