Creole Mustard Sauce

Mustard sauce ideal for serving over all fish varieties. Creole mustard mixed with sauteed green onion, crumbled bacon, tomato paste, orange juice, red wine vinegar, honey and spicy creole seasoning.
Ingredients -

2/3 cup Bacon, cooked and crumbled, reserve bacon fat.
2/3 cup Bacon drippings
2/3 cup Green Onions, chopped
16 ounces Creole Mustard
2/3 cup Tomato Paste
1 cup Orange Juice
1/3 cup Red Wine Vinegar
1/3 cup Honey
1 teaspoon Creole Seasoning

 
Preparation:

1. Cook green onion in bacon fat over low heat 5 minutes.

2. Add tomato paste and continue cooking 3 minutes.

3. Add creole mustard, orange juice, red wine vinegar, honey and creole seasoning.

4. Simmer over low heat 5 minutes.

5. Remove from heat and refrigerate until ready to use.

Place any remaining mustard sauce in a jar with tight fitting lid and refrigerate.

Fresh fish should not smell fishy. The fillets should be free of browning around edges and the fresh should be firm to the touch.
