Baked Tilapia

Tilapia fillets baked in hot oven and smothered in cheese sauce featuring sauteed onion, celery, bell pepper, fresh tarragon, and fresh basil.
Ingredients -

1 1/2 pounds Tilapia Fillets, rinsed in cold water, drained
1/4 cup Celery, chopped
1/4 cup Onion, chopped
1/4 cup Sweet Red Pepper, chopped
3 tablespoons Butter or Margarine
3 tablespoons All-Purpose Flour
Salt and Pepper, to taste
1 teaspoon Fresh Tarragon
1 teaspoon Fresh Basil
1/4 cup Milk
1 cup Mozzarella Cheese, shredded

 
Preparation:

1. Preheat oven to 425 F.

2. Add butter, celery, onion, and sweet red pepper to medium skillet.

3. Sauté until onion is tender.

4. Stir in all-purpose flour, salt, pepper, fresh tarragon, fresh basil, and milk.

5. Cook 1 minute, stirring, until thickened.

6. Add mozzarella cheese and stir until melted. Remove from heat.

7. Place fish in single layer of large baking dish.

8. Spoon cheese sauce over fish.

9. Bake 8 to 10 minutes or until the fish flakes easily with fork.
